I love lamb, but I don’t think I do it justice. Typically, I just sear it in a pan like you would with a steak. Are there any good recipes or go-to tricks for cooking lamb shoulder chops? Please let me know.

    Set chops on counter ~1 hour before cooking, coat lightly in oil. Add more salt and pepper than you think youd like (a lot falls off during cooking).

    Heat oven to 450(F), heat stove to high. Sear chops on both sides for about 45 seconds, then into oven (i use a cast iron so same pan for both).

    6 mintes per side for medium, 8 for med well, in the oven.

    Remove and plate, cover with foil and rest for 5 min (this step is important, dont skip it). Drizzle garlic butter, if desired.

      Thanks. This reminds me, I need to get a new cast iron pan. I have some limitations in my current kitchen but maybe I can find a nice smaller sized one.

    I like to keep it easy and just grill them. I’ll do a curry powder and yogurt marinade over night and then toss them on the grill for a few minutes on each side. Or I’ll keep it basic with just salt and pepper, but make some kind of sauce. I typically make a yogurt based sauce or a really herby one like a chimichuri or herb butter.

      That sounds good. I’ve never tried to make chimichuri but I’d really like to. Let me know if you have a specific recipe you like.

    If you can, get them on a barbecue. Rosemary /Thyme /Bay salt and pepper. Lamb is the best barbecue meat in my opinion, it’s amazing 😍
